本发明涉及食品技术领域,提供了一种食品体外预测血糖指数的测定方法,包括以下步骤: (1)将待测样品依次经过口腔模拟消化、胃液模拟消化、小肠模拟消化获得消化后的样品;(2)测定步骤(1)得到的消化后的样品的葡萄糖浓度;(3)根据步骤(1)中使用的消化液的总量和步骤(2)得到的葡萄糖浓度计算待测样品的预测血糖指数GI值。本测定方法适用于面条、杂粮面条、蒸制米饭(含杂粮米、重组米)、米果、淀粉、馒头(含杂粮馒头)、面包(含杂粮面包)、代餐粉体外预测血糖值的测定,能够缩短检测时间,降低检测要求,检测方法快速简单
